The verse is dark, and I will not pretend it is clear.
Listed are words each of which is the name of a hymn of the Atharvaveda: it has a hymn of the draught-ox, a hymn of the red one, a hymn of the “remnant” — ucchiṣṭa, what is left over from the sacrifice, in which, by that hymn, everything is contained.
What is listed, then, is not things but songs, and listed as a table of contents.
The last words give the key: paśyanto bahu-vistaram — “seeing widely”.
The sense, apparently, is this: those same Ātharvaṇas of whom the previous verse spoke hymn the One under many names and in many hymns.
And the next two verses will confirm it: there follows a roll of names — time, breath, death, Śarva, Maheśvara, Prajāpati, Virāṭ, Puruṣa, the waters.
Recall that the Atharvaśiras is built exactly so: there the litany named Rudra as Brahmā, as Viṣṇu, as fire, wind and death. Our book does the same more briefly — in two verses.
The word ucchiṣṭa is worth remembering. The Atharvaveda sings: “in the remnant are founded heaven and earth”; what remains after the sacrifice is there called the ground of the world.
