पायूपस्थे ऽपानम् ।
चक्षुःश्रोत्रे मुखनासिकाभ्यां प्राणः स्वयं प्रतिष्ठते ।
मध्ये तु समानः ।
एष ह्य् एतद् धुतम् अन्नं समं नयति ।
तस्माद् एताः सप्तार्चिषो भवन्ति

"In the lower gates is apāna; in the eye and the ear, through the mouth and the nostrils, prāṇa herself takes her station; in the middle is samāna: she distributes evenly the food that has been offered [as oblation]. From her come these seven flames."

The map of the districts. pāyūpasthe 'pānam — apāna governs the lower gates: excretion, evacuation, birth — everything descending and concluding; cakṣuḥ-śrotre mukha-nāsikābhyāṁ prāṇaḥ svayam — in the eyes, ears, mouth and nostrils is "prāṇa herself", the monarch in person: the gates of perception and breathing are the capital of the kingdom; madhye tu samānaḥ — in the middle is samāna, "the equalizer": eṣa hy etad dhutam annaṁ samaṁ nayati — "she distributes equally the food offered in sacrifice".
The word hutam — "offered as oblation" — turns physiology into liturgy: the food entering the body is called a sacrificial libation; digestion is a sacrifice upon an inner fire (the Gītā 15.14 will say in the Lord's own person: "having become the fire Vaiśvānara, I digest the fourfold food"). To eat is to perform a homa; hence Vedic culture eats with mantra and thanksgiving: the meal is a rite, the stomach an altar.
tasmād etāḥ saptārciṣo bhavanti — "hence these seven flames": the seven tongues of the inner fire — two eyes, two ears, two nostrils and the mouth: the powers of perception burn like fires fed by the common sacrifice of food. The lamps of the face are lit from samāna's kitchen — a beautiful physiology: the clearness of eye and ear is bought with the purity and measure of the table.
