idam vai tan madhu dadhyaṅṅ ātharvaṇaḥ aśvibhyām uvāca tad etad ṛṣiḥ paśyan avocat tad vām narā sanaye daṃsaḥ ugram āviṣ kṛṇomi tanyatuḥ na vṛṣṭim dadhyaṅ ha yat madhu ātharvaṇaḥ vām aśvasya śīrṣṇā pra yat īm uvāca iti
This is that honey which Dadhyañc Ātharvaṇa told to the Aśvins. Seeing this, the ṛṣi said: "O men! That formidable deed which you did for your own gain I shall reveal, as thunder reveals the rain: the honey that Dadhyañc Ātharvaṇa told you with the head of a horse."

The madhu-vidyā is clinched with a pedigree — and what a pedigree! Dadhyañc Ātharvaṇa, an ancient ṛṣi, knew the "honey" — and Indra threatened to strike off his head if he gave the teaching away. The Aśvins, the divine physicians, wanting the knowledge, resorted to a stratagem: they took off the ṛṣi's head, set a horse's head in its place, and with that head he told them the honey; Indra struck off the horse's head — and the Aśvins restored his own. The Ṛgvedic verse quoted here (RV 1.116.12) glorifies that "formidable deed".
The legend is no ornament: it is about the price of a teaching. The honey-vidyā cost a head; knowledge of the universal sweetness was handed on under the threat of lightning. There are truths the world (and its authorities) would rather keep under lock — and there are teachers ready to speak them even with a horse's head. Everyone to whom an Upaniṣad has come down drinks honey paid for by someone's courage.
